Nice native Alain Allegretti’s brings a distinct Mediterranean-style approach to cooking. He pulls from his European and Mediterranean heritage to create a menu replete with fresh fish and seafood dishes. Using seasonal ingredients sourced from local waters and farms, his signature dishes include whole roasted fish, filleted table side and an extensive raw bar – including our Grand Plateau, an awe inspiring tower that includes a whole Maine lobster tail, jumbo lump & Alaskan king crab, oysters, clams, shrimp and tuna tartar. Prior to joining LDV, Chef Allegretti studied under Alain Ducasse at his three-Michelin star restaurant Louis XV in Monte Carlo and thereafter earned two three-star reviews from The New York Times: first at the illustrious Le Cirque and then at the esteemed New York Ritz-Carlton’s Atelier.
